I do use the term vegetarian to describe my own shift, near the end of the article. I also do mention eggs/dairy but you’re right, I mostly focused on meat.
My idea is that I’m “moving towards veganism” and vegetarianism is a step along the way.
I think it is often perceived as a wealth thing, as seen in the comment left by Mindsmatter. The “vegan alternative” to a typical restaurant is a vegan restaurant, which is usually more expensive. And “vegan meat” is more expensive than regular meat. So it’s understandable why people think making the switch would be prohibitively expensive. Of course, eating at restaurants and buying (fake or real) meat are completely optional, but people don’t think about that.
